Tips for Using Your Green Egg Grill

Surprisingly, the Green Egg Grill has been around since 1974, smoking and grilling foods to perfection.  You will no doubt have your own style for cooking on the BGE grill, but there are some basic tips that can be used for beginners. As you get more experienced, you will want to try some new ideas of your own.

The ceramic walls provide the best environment possible for a long and slow cook. You can turn even the least desirable cuts of meats into succulent and tender gourmet meals. This BBQ allows  the meat to cook in a controlled temperature environment for hours and hours and produce the best taste ever.

When you are planning a long slow cook, you want to ensure there is enough flavor for the long period of smoking. First, you need lump charcoal, then well soaked flavor wood chips, and then repeat this process until the firebox is full. The layered effect will allow for the meat to continuously be filled with flavor during the entire smoking process.  Some of the best cooking results will come from varying the type of wood chips for different meats.  For example, hickory based wood chips are better suited for cooking ribs, while maple wood chips tend to work well when smoking salmon.

You can use the electric igniter or natural fire starters to get your BGE going. Once the temperature reaches a steady 250 degrees, you are ready to throw on the meat.  The plate setter can be turned with its legs in an upward position.  The heat will be indirect but this will allow the smoke to swirl around the meat, giving a more robust flavor. You do not have to turn the food, even in extended cooking periods when you make use of the plate setter.  You can also use your drip pan and add apple juice, or even beer for added flavor while cooking.

You will want to bring your Big Green Egg Grill up to 750 degrees to sear your steaks perfectly. Then use the dampers to control the heat setting and ensure the steaks are cooked rare, medium, or well done.

Ideally you should grill with the lid closed on this barbeque.  You will not experience grease flare ups as you will on a conventional grill.  Enjoy perfectly grilled food every time - everything from  steaks to chicken will come out juicy and tender.
